The salt draws out the meat’s moisture, yielding a firmer, more flavorful finished product. The hams are sometimes smoked but always aged. In fact, it can take up to a full year to produce the flavor and texture of a genuine country ham. These hams are sold whole or sliced, in center slices, biscuit slices or even breakfast ham slices.
They also have cooked, uncooked and peppered versions of their city ham. A city ham is boneless and has the salt and curing ingredients injected directly into the meat. This results in a much quicker curing process, about 24 hours, but it also results in a much milder flavor. Most of the hams found in local supermarkets are city hams.
